Enlightened Tuna Sandwiches
One way to save money is to eat out less. So Dr. P and I decided to eat out on Saturday and cook at home on Sunday.
I buy way too many cookbooks. A lot of them I probably will never use. But The Bon Appetit Fast Easy Fresh Cookbook is definitely the “you can use it almost everyday” kinda cookbook. All recipes only need a handful of common everyday ingredients, cook time is short, and cooking methods are easy. It is my favorite cookbook at the moment.
Enlightened Tuna Sandwiches
A mixture of nonfat yogurt and low-fat mayonnaise lightens up this version of the all-American classic. Lots of vegetables (cucumber, red onion, bell peppers, and Romain lettuce) add color, freshness, and flavor.
The Enlightened Tuna Sandwiches was the first recipe I tried from the book. It was a healthy version of tuna salad sandwich. It had tons of vegetables and used yogurt and low fat mayo as dressing. I liked it a lot. But Dr. P didn’t like it too much because of all the veggies. Why don’t guys like vegetables? He jokingly said, “is this a vegetable salad sandwich that used a little bit of tuna as garnish?” Well, I thought the sandwich was great!

I have mostly dessert/baking cookbooks. I don’t cook much American food for meals (prefer Asian).

Looks great! I like any sandwich with lots of different vegetables. I’ve never thought about replacing mayo with a mix of yogurt and mayo! It is a great idea.
